Mug cakes are VERY dangerous! Just load up, whack 'em in the microwave and a couple of minutes later you're ready to tuck in!

Depending on the size of your mug and microwave these may take less or longer time to cook. Keep an eye on it and you’ll see it rise, check that the mixture is cooked by placing a finger on the top of the cake. If it’s still wet, it needs a little longer cooking time. Eat the cakes warm and ensure you use microwave safe mugs.

1. Hazelnut chocolate spread mug cakes

Makes: 2

 

You will need:

4tbsp of sunflower oil

2tbsp of milk

1 large egg

5tbsp self raising flour

4tbsp sugar

3tbsp of cocoa powder

3tbsp of hazelnut chocolate spread

Extra spread and strawberries, to serve

 

Here’s how:

1. Whisk sunflower oil, milk and egg together in one mug, and then stir in self raising flour and sugar.

2. Whisk mixture briskly until well combined,  mix in 
cocoa powder and then hazelnut chocolate spread.

3. Tip half of mixture into a second mug and microwave for 2 min on 800W.

4. Serve with a dollop of hazelnut spread and a strawberry on top.

 

2. Apple crumble mug cakes

Makes: 2

 

You will need:

4tbsp of sunflower oil

2tbsp of milk

1 large egg

6tbsp self raising flour

4tbsp sugar

1 apple, peeled, cored and diced

4tbsp porridge oats + 2tsp sugar

 

Here’s how:

1. In one mug, whisk together sunflower oil, milk and egg, and then add self raising flour and sugar and whisk again.

2.  Mix in apple then tip half of mixture into a second mug and microwave for 2 min on 800W.

3. Sprinkle oats and sugar on top and pop back into microwave for 20 sec.

 

3. Classic birthday mug cakes

Makes: 2

 

You will need:

4 tbsp of sunflower oil

2 tbsp of milk

1 large egg

6 tbsp self raising flour

4 tbsp sugar

1tsp vanilla extract

Icing and decorations, to serve

 

Here’s how:

1. In one mug, whisk together sunflower oil, milk, vanilla extract and egg, and then add self raising flour and sugar and whisk again.

2. Whisk these briskly until well combined and no lumps of flour can be seen.

3. Tip half of  mixture into a second mug and microwave for 2 min on 800W.

4. Allow to cool, then decorate with a generous swirl of icing and a many sprinkles as you can get on!

 

4. Afternoon tea mug cakes

Makes: 2

 

You will need:

4tbsp of sunflower oil

2tbsp of milk

1tsp vanilla extract

1 large egg

6tbsp self raising flour

4tbsp sugar

Cream, jam and fresh strawberries, to serve

 

Here’s how:

1. In one mug whisk together sunflower oil, milk, vanilla extract and egg, and then add self raising flour and sugar and whsk again.

2. Tip half of mixture into a second mug and microwave for 2 min on 800W.

3. Slice top off each mug cake, fill with jam, cream, replace the top and finish with a strawberry.
